Carol's career efforts have been focused on consumer education, staff development and program planning since 1980. Clients include healthcare and educational institutions, as well as business and industry. She is an experienced course developer, Nutritionist, researcher, facilitator, lecturer and counselor.

Carol founded the Diabetes Core Curriculum Workshop in 1994. She saw a need for healthcare professionals to increase their knowledge and skills for educating patients with diabetes and wanted to create a forum in which individuals could learn effectively. The course has received national recognition and has instructed nearly 2,000 healthcare educators since 1994. The DCCW continues to attract individuals who want to learn the most up-to-date information concerning diabetes clinical standards in an enjoyable, relaxed learning environment.

In 2005, Carol completed an appointment as lead research nutritionist at the Department of Preventive Medicine, State University of New York at Stony Brook on the Dietary Trial of the "Women's Health Initiative," a National Institute of Health research study.

In May 2010 Carol was recognized by the members of the Metropolitan New York Association of Diabetes Educators by receiving their “Diabetes Educators Advocate of the Year” award. This award is given to acknowledge and thank a person for their contributions to enhance and empower the lives of people with diabetes through their work and dedication.
